An evening of sublime flavours as the US Consul General hosted an evening of American wine and US cheese.

America is well known for it’s wine, but it might surprise you to know that the US is now the world’s biggest cheese exporter. And we’re not talking those synonymous processed cheese slices. A thriving quality artisanal cheese industry offers everything from award wining cheddars to sublime blue cheeses, ‘Parmesan’ wheels and ‘French’ bries and much more – there’s something for everyone to enjoy and explore. And soon to be, if the US Dairy Export Council  and Schuman Cheese are successful, available in a shop near you.

The Great European Carnival returns to the Central Harbourfront this winter from the 16th December 2016 – 12th February 2017. As well as games, thrilling rides the midway this year will again feature a stage with a wide range of entertainment.

This year’s Ocean Park Halloween Fest has a Ghostbusters feel as it looks to make you laugh and scream! The Park will feature Halloween themed attractions where visitors looking for scares and excitement can test their proton run skills as the they run from hordes of ghosts in New York’s subway and streets!

As well as scares there’s creepy food during Halloween Fest and this year Ocean Park will be serving haunted school themed dishes.

At Café Ocean the Mortuary Set Menu features the Ghostly Toilet of Death (Tomato Ox Tail Soup) served in a toilet bowl-shaped container. Opening the toilet bowl lid reveals a skull-shaped piece of toast floating in the blood coloured soup. Amongst the main dish is the Biology Class of the Damned, an assorted platter presented to look like the organs of a human being. A seafood vegetable pâté for the brains, deep-fried chicken breasts with brie cheese for the lungs, a triangular roasted chicken fillet for the liver, a pan-fried beef striploin for the stomach and finally chipolata sausage in tomato sauce for the intestines. For dessert beware the ‘Possessed’ Chalkboard Eraser (Charcoal Helvetic Rolls).

All these Halloween Fest set menus are only available until 31 October.

Wine & Dine Festival 2016

This year’s Hong Kong Wine & Dine Festival returns to the Central Harbourfront from 27 to 30 October. The venue is 20% larger than last year and the festival features more than 410 wine and food booths in five distinct themed zones.

The ‘Tasting Room’ will host unique Master Chef Dinners ($1,688) prepared by Chef Gaggan Anand of Bangkok restaurant Gaggan in collaboration with three local Michelin-starred restaurants and other Hong Kong establishments.

From wine and whiskey to craft beers and cocktails, there is a wide variety of choices to suit different tastes. The range of gastronomical delights to choose is extensive, including street food and creations from some of the city’s trendiest restaurants and top hotels.

Brunch on the Terrace

Sunday brunch on the terrace, what’s not to like? This month The Envoy at The Pottinger Hotel in Central launched a new Sunday Brunch menu featuring a range of dishes designed to complement their delicious crafted cocktail menu.

The brunch dishes are solid, but the range of choices is very traditional. bc tried the eggs benedict (available with creamy spinach; parma ham and mushroom or smoked salmon and avocado) $188, traditional breakfast $178 and the milo lava toast $88. All were well presented and enjoyable, but nothing to have you tweeting, get here and try this… unlike the cocktails which are rather good.

And really you are here to relax,chat and enjoy the fine crafted cocktails created by Charlene Dawes and Antonio Lai – the duo behind the drinks menus at Quinary and Origin. There are over 25 to choose from and there’s quite literally something for everyone. Many of the most interesting feature twists on local dishes and ingredients and flavours range from sweet to sour and everywhere in between. Almost all are served in unique or interesting glasses and clever, but not extraneous garnishing is the rule of the day.

What’s good about the current crafted cocktails trend is that they’re drinks designed primarily to be enjoyed – not to get you drunk. This allows for the tasting and enjoyment of several, where the only pain will be on your wallet as they not cheap costing between $128-$188.

There are lots of relaxed places to enjoy sunday brunch, The Envoy’s terrace with the sun out, cocktail in hand is certainly one to add to your list of options.

Megabites: Dub concept by SAAM

Kaleb Davis of Dub

The graffiti clad exterior of Dub is deceptive, for inside the space that used to be SAAM new chef Kaleb Davis has worked to combine the ethos behind his 5star hotel experience with the relaxed friendly street vibe of New Zealand where the Hong Kong native grew up.

The result, in combination with long term friends Bibiana Ling and Alex Gardner, is a relaxed comfortable 25 seat venue that offers a small but varied menu of comfort food.  But expect the menu to expand as Kaleb and Alex experiment with the latest in food preparation ‘toys’, from restaurant owner Catering Depot, in their new kitchen.

Dub invited bc to sample some of the dishes on their soft opening menu. Upon arrival we were served with a 3 roll bread basket which included a tasty squid ink roll that went nicely with the herb butter. All the wines are available by the glass.

For starters we had the quail scotch egg; quail eggs wrapped in homemade pork cheek sausage meat and then breaded and cooked and served on a bed of horseradish. A nice twist on the traditional scotch egg, with the diced cut pork cheek having a lovely texture and offering good strong but not overpowering flavours to start; with four halves to a portion there’s plenty to go around.

Served with sourdough toast slices, the tartare is fresh and fairly spicy with the mix a little heavy on the onions and capers – which might not please those who prefer a more full meat tartare. The flavour is good and the portion size enough to share.

The menu currently consists of six main dishes Wagyu Beef & Pork Cheek Rissoles ($228), Crispy 24Hour Pork Belly ($228), Charred Spring Chicken ($228), Lamb T-Bones 140oz ($298) 1/2 Breaded Red Mullet Fillets ($198) andGoats Cheese Tortellini ($178). Fellow diners were effusive and vocal in their enjoyment of the pork belly and tortellini options.

bc tried the wagyu beef and pork rissoles served on bed of orzo pasta risotto with a smoked tomato sauce. Orzo pasta is a short cut pasta shaped like a rice grain, and makes for a risotto that’s a little different to that your taste buds are expecting. The wagyu beef and pork cheek rissoles are cooked pink and full of flavour with the meat juices enriching the risotto. A very enjoyable dish, although the smoked flavour of the tomato sauce was barely noticeable amidst the other strong flavours of the rest of the dish.

bc can’t remember seeing lamb served locally as a T-bone steak before and the concept is intriguing and tasty – here two t-bones are served with beautifully roasted potatoes. But it’s a dish that’s a work in progress, the two t-bones were cooked rare, almost blue for the thicker one, making the meat difficult to remove from the small bones. While Dub has a street vibe, it’s not the sort of place where you feel comfortable picking up and chewing the bone to get at that lovely flavour. The sweet wine sauce served on the side was nice but overpowered the meaty flavour of the lamb. A slightly thinner cut of t-bones, maybe an inch thick rather two inches and the option to have the ‘t-bone’ steaks cooked to ones preference would let this dish shine.

There’s a range of sides including: Mac n Cheese Arancini ($68), Truffle Fries ($58), Eggplant and Buffalo Mozzarella salad ($128). While the dessert options include Pecan Pie ($88), Mango Creme Brulee ($88) and Apple Tarte Tatin with Salted Caramel Ice-cream ($88)

Dub is a friendly relaxed place with efficient but un-obtrusive service. The dishes are familiar but with a twist, the flavours complex but not so that you can’t relax over a meal. Portion sizes are good, and plated with care. There’s an understated attention to detail that promises more to come as Kaleb becomes comfortable with his kitchen and that subtle difference between working for someone and being Chef and Owner of his own restaurant.
